How to Prepare a basic Peruvian ceviche (raw fish marinated with lime juice)

If you're a fan of sushi, then you have to try out this delicious raw fish recipe. It's not your typical raw fish. It's called ceviche, and it's a South American (in this case, Peruvian) dish of marinated raw fish. It's an interesting process where you don't cook the food on the stove or in the oven, but instead you marinate your ingredients in lime juice, which basically "cooks" the raw fish. A very fresh dish, perfect for anytime you want something a little lighter for a meal or a snack.

INGREDIENTS:

* 1/2 lb tilapia

* 5 limes

* 2 lemons

* 1/2 red onion, diced

* 5 cloves garlic, diced

* 1/4 bunch cilantro, chopped

* 1/2 green bell pepper, diced

* 1 hot pepper, diced

* 2 Roma tomatoes, cut into wedges

* salt

* pepper

* water

HOW-TO:

Prepare the Tilapia

1. Filet the tilapia and place in a bowl of cold water and salt for about 10 minutes

2. Pat dry, de-bone and cut into bite-size pieces.

Add the Ingredients

1. Juice the limes and place them in a bowl with the fish

2. Add diced onion and garlic

3. Add chopped cilantro

4. Remove seeds from bell pepper, dice and place in bowl

5. Juice the lemons and combine with other ingredients

6. Add diced hot pepper

7. Season with salt and pepper

8. Cut tomato into wedges and add

9. Mix well and refrigerate overnight

Plate and Serve

1. Serve with chips and sweet potato or pairings of your choice

2. Enjoy!
